Most of us think of the slow cooker as a kitchen workhorse best reserved for use during the week for simple stews,
hearty soups, and the like. But what about pulling the slow cooker out for entertaining?
Beef Burgundy is a bit more refined and delicate than American-style beef stews . Our challenge was to prevent the
flavors from dulling during the long simmer in the slow cooker. And because the stew contains red wine, we needed
to work to ensure that the wine flavor turned out rich and complex, not boozy or harsh, in the finished dish.
Meaty, rich short ribs are also perfect for the slow cooker. We found a way to produce beer-braised short ribs that
weren’t swimming in fat.
