These meaty ribs are slow-smoked for their trademark flavor—and traditional recipes truly do take all day to barbecue. Is there a faster way?

For serious barbecue lovers, it’s hard to choose a best-loved style of ribs, but we’d be willing to bet that smoky, sweet Kansas City ribs are a top contender for many. In addition to speeding up the barbecuing process, we needed to determine the best type of ribs for this dish—there are many to choose from—and we wanted to develop a KC–style barbecue sauce. It had to be be sticky enough to cling to the ribs, but not overly sweet or cloying, and it needed the slightly spicy, warm flavors of the real thing.
