Poached salmon is a dish usually reserved for feeding a crowd. But why not adapt this party time entrée for weeknight dining? By developing a recipe using fillets, and matching it with a simple, rich sauce, we found a way to bring silky-textured poached salmon to the family dinner table. As for fried fish, the mess that a bubbling pot of oil leaves behind is rarely worth the effort. We set out to create super-crispy, oven-fried fish that gave us moist, tender fish surrounded by a golden brown, crunchy crust—but without the hassle and mess of stovetop frying.
