When made correctly, soufflés are the ultimate dessert. Their billowing tops look dramatic, and their texture is melt-in-your-mouth creamy and light. But preparing a soufflé at home is intimidating, and it’s no secret that soufflés are temperamental. Our goal was to make a foolproof soufflé with a dramatic rise and a pleasing contrast between the light, crisp exterior and the rich, creamy interior. For an encore, we developed a version that gave us the same results but could be made ahead of time.
